Summerlicious Chicken Shwarma Recipe

In preparation for the special event happening in Toronto this July, Summerlicious, why not try your hand at making a healthy, home-cooked version of a popular Toronto street snack: Chicken Schwarma? Because surely, when it comes to special events in Toronto is mouthwateringly best. 

Ingredients:

1 Tbs ground coriander

1 Tbs ground cumin

1 Tbs ground cardamom

1 Tbs chili powder

1 Tbs steak seasoning

1 tsp smoked paprika

½ tsp ground turmeric

1 lemon, juiced

1 minced garlic clove

5 Tbs extra virgin olive oil

4 boneless, skinless chicken breast halves. 

1 sliced onion

1 sliced red bell pepper

1 sliced yellow bell pepper

1 ½ cup Greek yogurt

¼ cup tahini

1 tsp extra virgin olive oil

Directions:

special events in toronto1. Start by preheating the grill. An inside grill will work, but cooking on an outside grill will taste all the better. 

2. Put the first seven seasonings in a bowl and whisk until thoroughly mixed. Add half the lemon juice, the minced garlic and 3 of the tablespoons of olive oil.Coat the chicken breasts with the paste.

3. Grill each breast for about 6 minutes, cooking until the chicken is no longer pink in the middle. When done, remove from the grill, wait a couple minutes for it to cool, then cut the breasts into slices and set aside.

4. Add 3 tablespoons of the olive oil to a frying pan, then sauté the onion, red pepper and yellow pepper until tender. Add salt and pepper to taste, then set vegetables aside. 

5. Stir together the Greek yogurt, the tahini, the rest of the lemon and 1 tsp olive oil in another bowl until well mixed. Season with salt and set aside. 

6. Take the pita bread rounds and grill them until they are lightly charred on the outsides. To assemble the meal, put the chicken and vegetables on top of a slice of pita, and dollop with the creamy tahini sauce.
